COLORADO


Oh vacation.... It's always amazing to me how quickly you come and go.  The weeks leading up to it are always super exciting because that time away is always much needed.  And then, somehow as quickly as it comes it is gone.  You get back and life continues on just as it always does but you are somehow refreshed and able to get back to it.  Above are some pictures from the first day of our family vacation in Durango.  It was so beautiful and the air my friends could not be fresher.  Aside from the taxidermy filled house we stayed in, the trip really could not have been more fun.  The first day we just explored the cute town.  And seriously, how cute is my nephew?  He's also become quite the little comedian.  He had us all laughing the entire time.

Let me tell you something.  My hair has been fighting back lately.  Believe it or not, my hair doesn't not have a natural wave.  What?  Ya, I know.  I bet you didn't know that - not.  Anyway. the left side used to curl just the same as the right and now it won't.  So I think it's time for a real cut again.  I'll marinate on that decision a little longer but it definitely needs to be chopped.  Just the thoughts swirling in my head as of late.  Also, this is another shorts outfit.  Pretty self explanatory I'd say...

Somehow weeks have just been flying by lately.  I mean how is it already Monday again?  Someone please tell me.  This outfit was an easy option for an easy Saturday.  The effort put in was minimal which was exactly what I needed.  On the plus side it's cute and old.  Sometimes you just can't beat what's hiding in the back of your closet (or maybe even your sisters)!  Hoping she doesn't notice this one.

Summer has literally taken my brain and turned it to mush.  Ok, maybe not literally but it sure does seem like it.  I got back from vacation on Monday and vacation is all I have thought of since.  Well, that and the pool, beach or something fun.  Which lucky for me is exactly what I'm doing today. I've got this pretty awesome nephew who is always up for a pool day so I guess my wish is his command... or something like that.  I hope you're at the pool, enjoying it like I am! Happy weekend, and do something fun, you deserve it.

Also, I love this top.  It's light and airy and perfect to tie up.  Madewell almost never lets this girl down.

Really missing waking up to these beautiful views right about now.  A short vacation always seems like the perfect amount of time until you're leaving (especially when you're the first one to leave).  The only thing I'm not missing is all the taxidermy (you know what I mean if you follow me on instagram!) 

Found this dress on sale (and in my size!) and I had to have it.  I always gravitate towards a shift dress for some reason, they always seem more versatile.  Whether you wear them dressed up, down, with or without a belt I always know I can wear it anywhere!

How is it already time to paint my nails again??  Sneaks up on me every time!

BREAKFAST CASSEROLE


If you want a breakfast that doesn't require very much work in the morning (but some the night before) then, this is the recipe for you.  It's delicious and I'm not really sure what else you need to know... It's like a casserole, for the morning that combines everything that's amazing about breakfast.  I made it for my dad for his birthday and he loved it!  Here's the recipe:

INGREDIENTS:
8 center cut bacon slices
1 1/2 cups chopped onion
8 oz slices shitake mushroom caps
3 garlic cloves minced
2 cups shredded hash brown potatoes
quarter cup unsalted chicken stock
5 cups fresh baby spinach
2 tbsp thinly sliced fresh basil
1/2 teaspoon kosher salt divided
1/3 teaspoon freshly ground pepper divided
3 oz reduced fat swiss cheese
1/2 cup milk
6 large eggs lightly beaten

1.  Cook bacon until crisp
2. Remove from pan and crumble
3. Add onions, mushrooms, and garlic to pan drippings and increase heat to medium-high.  Saute six minutes.
4. Add potatoes and stock and saute for six minutes.
5.  Add spinach, basil, 1/4 tsp salt, and 1/4 tsp pepper and cook until spinach wilts.
6.  Remove from heat, add cheese and crumbled bacon and combine in broiler safe dish coated with cooking spray.  Stick in refrigerator over night.
7.  Remove from the refrigerator and preheat oven to 350 degrees.
8.  Combine eggs, milk, remaining salt and pepper and beat together.  Pour over mushroom mixture and bake for 28 minutes.
9.  Preheat broiler and remove dish.  Broil for 3 minutes until top is browned.  Let sit 5 minutes and serve!

This is easier than it looks and your tummy will thank you in the morning, and so will your family!!

As you already know, I love chambray.  You could probably catch me wearing one multiple times in a week.  So when I found this one at Target with the FEED collection it was a no brainer, it was coming home with me.  Plus it's a great cause that helps feed (obviously) those in need.  

On another note, I'm finally back to regular posting.  These last few weeks have been somewhat hectic but I am back and refreshed.  But how can you not be after a trip with the most beautiful views.  Sad to be back to reality to quick but happy for the time away!

I don't know if it's the heat, the early drinking (it's 5 o'clock somewhere) or a simple lack of motivation but I have had a total writers block this week.  I opened and closed this post multiple times this week because I just couldn't think of anything to say that would be worthwhile (and I suppose I still haven't).  So I settled on this.  The good news (for me at least) is that once next Thursday rolls around I am headed out and onto a mini vacation.  Believe me, it couldn't come sooner!

Onto the dress... It's so light, airy and comfortable for these hot and humid days we've been experiencing.  Plus there's the cute little cutout in the back!  I added the fun shoes for a print pop but left everything else very simple.  What's your favorite way to wear an LBD?

There's just something about white on white for a summer night that can't be beat.  It's so crisp and finds a way to be dressed up even though it goes against all the rules.  There's also something about this top that is just so cute, plus it's on sale (like just about everything else right now)!  Hope you're having a great week!  It's been a tough one for me after the holiday!  Summer time and work just don't go together, wouldn't you say?
